Oven Baked Broccoli Fried Rice

  1. Whisk 4 eggs in a medium bowl and season with 1/2 tsp of salt.
  2. In a separate bowl whisk sugar, soy sauce, vinegar, and 1 tsp of salt. Add the 1 inch piece of grated ginger and minced garlic and give the sauce another whisk.
  3. In another bowl add the broccoli and scallions, season with a good pinch of salt, and toss with the sesame oil. Now add the sauce and gently fold together with a rubber spatula until the rice is fully coated.
  4. Spread the mixture on parchment paper on a baking sheet and cover with aluminum foil. Bake for 10 minutes. Remove the oil and bake until slightly browned, another 12 to 15 minutes.
