Oven Baked Broccoli Fried Rice

Ingredients
- 4 eggs
- 3/2 tsp salt
- 1 tbsp sugar
- 4 tsp soy sauce
- 1 tbsp vinegar
- 1 inches ginger
- 2 cloves garlic
- 1 broccoli
- 1 bunch scallions
- 2 tbsp sesame oil
- 3 cups rice
Recipe
- Whisk 4 eggs in a medium bowl and season with 1/2 tsp of salt.
- In a separate bowl whisk sugar, soy sauce, vinegar, and 1 tsp of salt. Add the 1 inch piece of grated ginger and minced garlic and give the sauce another whisk.
- In another bowl add the broccoli and scallions, season with a good pinch of salt, and toss with the sesame oil. Now add the sauce and gently fold together with a rubber spatula until the rice is fully coated.
- Spread the mixture on parchment paper on a baking sheet and cover with aluminum foil. Bake for 10 minutes. Remove the oil and bake until slightly browned, another 12 to 15 minutes.
