Pulled Pork Peppers

  1. Preheat oven to 350F.
  2. Prepare the bell peppers, rub them with olive oil salt and Pepper, Then place them in the snug fitting baking dish, Cut side up. Place the baking dish in the oven for 20 minutes. Meanwhile, coarsely grate or finely chop tomatoes and finely chop the onion and the parsley stalks, reserving the Parsley leaves for later. Put them in a bowl add the red wine vinegar, ketchup, paprika and some olive oil. Chop the pork, add to the bowl and scrunch everything together until really well mixed.
  3. Take the dishes out of the oven. Working fairly quickly, Poor any liquid from the peppers into the pork mixture you started together, then divide the mixture evenly amongst the peppers and return to to dish to the oven. For 26 minutes or until the peppers are golden. Roughly chop the parsley leaves, scatter them over the peppers, and serve right away.
  4. This dish goes great with the easy risotto.
