Curried Cod

Cookware
- frying pan
Ingredients
- 1 tbsp oil
- 1 chopped onion
- 2 tbsp curry powder
- ginger
- 3 cloves garlic
- 800 g chopped tomatoes
- 400 g chickpeas
- seasoning
- 4 cod fillets
- 1 lemon zest
- coriander
- lemon wedges
Instructions
Step 1
Heat the oil in a large, lidded frying pan.
Step 2
Cook the chopped onion over a high heat for a few minutes, then stir in the curry powder, ginger, and garlic.
Step 3
Cook for 1-2 minutes until fragrant, then stir in the chopped tomatoes, chickpeas and seasoning.
Step 4
Cook for 8-10 minutes until thickened slightly, then top with the cod fillets.
Step 5
Cover and cook for another 5-10 minutes until the fish is cooked through.
Step 6
Scatter over lemon zest and coriander, then serve with lemon wedges to squeeze over.
