Nectarine & Tomato Salad

Ingredients
- 4 nectarines
- 2 yellow tomatoes
- 2 red tomatoes
- 1/4 cup olive oil
- 2 tsp finely grated lemon zest
- 2 tbsp lemon juice
- 1/3 cup light feta cheese
- 8 fresh basil leaves
- 1/2 tsp coarse sea salt
- 1/4 tsp pepper
Instructions
Step 1
Cut nectarines in half and remove pits; cut each half into 6 wedges. Core and halve yellow tomatoes and red tomatoes; cut each half into 4 wedges. Arrange on a platter.
Step 1
Whisk together olive oil, finely grated lemon zest, and lemon juice. Drizzle over salad.
Step 1
Sprinkle with light feta cheese, fresh basil leaves, coarse sea salt, and pepper.
