Oven Baked Broccoli Fried Rice

Ingredients
- 4 eggs
- 1/2 tsp salt
- 1 tbsp sugar
- 4 tsp soy sauce
- 1 tbsp vinegar
- 1 tsp salt
- 1 inches ginger
- 2 cloves garlic
- 1 broccoli
- 1 bunch scallions
- salt
- 2 tbsp sesame oil
- 3 cups rice
Instructions
Step 1
Whisk eggs in a medium bowl and season with salt.
Step 2
In a separate bowl whisk sugar, soy sauce, vinegar, and salt. Add the grated ginger and minced garlic and give the sauce another whisk.
Step 3
In another bowl add the broccoli and scallions, season with a good pinch of salt, and toss with the sesame oil. Now add the sauce and gently fold together with a rubber spatula until the rice is fully coated.
Step 4
Spread the mixture on parchment paper on a baking sheet and cover with aluminum foil. Bake for 10 minutes. Remove the foil and bake until slightly browned, another 12-15 minutes.
